In Rueil-Malmaison in the Île-de-France, this artist of the cuisine can be found behind the kitchen of restaurant l'Ochre. Starting his apprenticeship at the age of 14, chef Baptiste Renouard rubbed shoulders with the greatest names in French gastronomy before moving in. It's difficult to choose between the 5-course "Creation" menu and the 7-stop "Tasting" menu, as the dishes seem tantalising.
Built into real artistic works, the compositions place the most on plant life. It is the queux master himself who harvests flowers and herbs, which he uses as ingredients. To the precision of the presentation, add the exhalation of the aromas and the subtleness of the flavours. A gastronomic moment of choice awarded a Michelin star.
