In Vonnas in the Auvergne-Rhône-Alpes, L'Ancienne Auberge 1900 continues the tradition of the three generations of Cook Mothers of the Blanc family, before Georges took over the reins. The chef wished to preserve the authenticity of the origins, including in the decoration and layout: the floor is in tiles, the structure is visible, the tables are thick wood and the tablecloths are checked.
The menu is naturally designed in the same way. Based on local produce, chef Olivier Chardigny likes to reinvent the traditional dishes of our respective grandmothers, adding a touch of modernism, with the result always tasty.
